in a convection oven at 200° in a loaf mold with lid for dough weighing up to 450g
Ingredients list:
- 350g Mix Bread, pizza and desserts Revolution New Food
- 200g room temperature water
- 50g milk
- 8g fresh brewer’s yeast
- 20g olive oil
- 7g honey
- 5g fine salt
Step 1
Pour the water, milk, honey and brewer’s yeast into the bowl of the mixer and mix until the yeast is dissolved. Combine the flour and operate the planetarium with the leaf whisk, turn it for a few minutes and then stop the machine and scrape the walls and the bottom of the bowl well, in this way you can check if there are lumps or if the flour has not been absorbed all. Once this operation is done, add the olive oil and re-activate the planetary mixer and turn it for 2 minutes at low speed. At this point the dough is ready, scrape it off the walls of the bowl and cover it well with the transparent film.
Step 2
Heat the oven to 40 degrees and boil a saucepan with water, when it boils put it in the oven together with the bowl and let it rise until doubled. When the dough has doubled, take it out of the oven, grease the loaf mold with seed oil, place it on the scale and pour the dough into it, carefully lower it with greased hands and cover with plastic wrap and put it back in the oven at leaven, once the dough has risen in the mold it must reach about 2 fingers from the edge, it will take about an hour to rise again.
Step 3
At this point turn on the oven at 200° ventilated, let it warm up well; remove the film from above the mold, take the lid of the mold, grease it well and close everything. Bake for 10 minutes at 200° and then lower to 190° for another 25 minutes. The bread is ready when it has a nice colour, to check it you have to open the lid slightly. If you are not sure, leave it in the oven for another 5 minutes. Once it is cooked, it must be cooled in the closed mold so you will avoid collapses due to the sudden change in temperature.
