In pot with meat broth; in a pan with the mantis shrimp sauce
Ingredients list:
- 80g parmesan or grana padano
- 100g breadcrumbs (plus any to harden the dough)
- 3 medium eggs
- Pinch of salt
- grated nutmeg to taste
For the mantis shrimp sauce:
- mantis shrimp
- tomato puree
- tomato concentrate
- chili pepper
- extra virgin olive oil
- Salt to taste
- 1 stick of celery
- 1 carrot
- 1 potato
- 1 piece of pork loin
- 1 piece of beef
- 1 piece of muscle
- 1 piece of chicken
- Salt to taste
Step 1
In a bowl, combine the breadcrumbs, grated Parmesan cheese, eggs, grated nutmeg and a pinch of salt. Knead everything by hand until you get a nice firm ball, if you feel it’s still a little soft, add more breadcrumbs. When the dough is ready, wrap it in plastic wrap and let it rest in the refrigerator for at least an hour.
Step 2
After this time, remove the dough, cut it in half and put it in the potato masher. Crush all the way down until you get the passatelli. Boil a saucepan with water and a pinch of coarse salt. When the water boils, add the passatelli and cook them for 2 minutes. Drain them with a sieve and sauté them in the pan with the shrimp sauce.

Take a very large saucepan and fill it with water, add the celery and carrot and bring to the boil. When it boils, drop the meat and cook for 3 hours, halfway through cooking add a potato. Once ready, extract all the meat and vegetables and use the filtered broth to cook the passatelli.
Passatelli in broth should be enjoyed while still very hot!.
