- 200g Integral Mix for Revolution leavened products
- 120g water at room temperature
- 2g fresh brewer’s yeast
- 5g olive oil
- 2g salt
- Olive oil
- Coarse salt
- Fresh rosemary
Step 1
Pour the water and the yeast into the bowl of the planetary mixer, mix with a teaspoon to dissolve the yeast well, add the flour and mount the leaf whisk or K beater. Turn on the planetary mixer and spin for 5 minutes, if you see that the dough does not become homogeneous stop the planetary mixer and with a spatula check the bottom of the planetary mixer and if you still see flour, turn the dough so that those residues come to the surface.
At this point weigh the oil and salt together and pour them on the dough and let it turn again for 5 minutes. The dough must be smooth and homogeneous, there must be no lumps.
Step 2
At this point, transfer the dough onto a well floured surface and divide the dough into two parts. Help yourself with your hands to give an approximately rectangular shape to each piece of dough. Now with a rolling pin roll out each piece of dough in order to obtain a rectangle as in the picture about 2-3 mm thick.
Repeat the same action for the other piece of dough as well. Place them on a baking tray lined with parchment paper and place them in the oven with the light on. Bring a saucepan with water to the boil and place it in the lowest part of the oven. Let rise until doubled, it will take about 60/90 minutes.
Step 3
Once they have risen, remove the pan from the oven and the flatbreads, insert the refractory stone on the bottom of the oven and turn it on at 230°. When the oven has reached temperature, brush the surface of the flatbreads with olive oil and add the fresh rosemary needles and coarse salt.
Step 4
Now bake with the help of a small wooden shovel that usually comes with the stone. They will take about 10-12 minutes to cook, when they are golden brown remove them from the oven and let them cool
Now stuff them however you want but stuff them well because it has to be like a sandwich!!! And now enjoy your Sandwich Crusher!!!
