Ingredients list:
- 300g Mix Shortbread
- 100g cold butter
- 50g coconut sugar
- 50g icing sugar
- 1 egg +35g of egg white
- 1g salt
- Spices: cinnamon, starry friends, ginger and cardamom to taste
Step 1
Put the flour, the spices, the salt, the butter into the bowl of the planetary mixer and sandblast, you must obtain fine crumbs like sand. Add the sugars and mix for 1 minute. Combine the egg and the egg white and mix until you have an almost united mixture. Take the dough and roll it out between two sheets of parchment paper giving it a rectangular shape. Leave to rest for 30 minutes in the refrigerator
Step 2
Take the dough back and roll it to a thickness of about 5/6mm 7. Cup the biscuits with the molds of your choice and place them on a pan with oven paper (better still micro-perforated pan and micro-perforated mat) Rest in the refrigerator for 15 minutes. Bake in a preheated oven at 170 degrees ventilated for 15 minutes they must be lightly browned. Remove the pan from the oven and let it cool. Decorate them cold or with sugar paste or royal icing. If you use royal icing let it dry before putting away or bagging Now you can eat them or give them away!.
