CHIACCHIERE
Doses for:
30 doses
Preparation:
15 min
Difficulty:
easy
Cooking:
fry in boiling oil for one minute
Ingredients list:
- 200g pasta mix
- 1 tablespoon of anise liqueur (or rum, or witch)
- 1 tablespoon of olive
- 1 egg
- 4g baking powder
- 50g Sparkling wine (indicative) + possible addition
- 15g of sugar
- 1 liter oil for frying
- powdered sugar to decorate
Step 1
Put all the ingredients in the bowl with the initial 50g of wine and start kneading. You can do it either by hand or with a stand mixer. You have to get a soft brick but that doesn’t stick to your hands. If you see that the dough remains grainy and does not agglomerate, add more wine little by little. Once you have obtained the dough, wrap it in cling film and let it rest for 15 minutes. After this time, divide the dough into 3 and work one piece at a time with the help of the pasta machine. of rice or for dusting and roll it thin.
Step 2
With a toothed cutter wheel, make rectangles and make an incision in the center like an opening, do this for all the bricks. When they are all ready, heat the oil. The chatter drops only when the oil has reached 170 degrees. Talk down, if you’ve pulled them thin they’ll cook in a short time. They shouldn’t be too golden
Step 3
Remove them from the oil and place them on absorbent paper or straw paper so the excess oil will be absorbed.
When they are lukewarm-cold, sprinkle with icing sugar
